Von einer Indianischen Henn
seind zwantzigerley Speiß vnd Trachten zu machen

Of a turkey there are twenty dishes to make.

Indianischen Henn 1. Warm abgebraten mit einem Pobrat/ oder trucken geben/ Oder kalt lassen werden/ denn es ist ein gut Essen/ wenns kalt ist.

  1. Warm roasted with a Pobrat sauce/ or given dry/ or let become cold/ for it is a good food when it is cold.

Indianischen Henn 2. Pasteten kalt oder warm.

  1. Pies cold or warm.

Indianischen Henn 3. Gliedt den Indianischen Han ab/ Flügel vnd Diech/ füll ein jeglichs besonder/ vnd wenns gefüllt ist/ so setz es zu/ vnd laß an die statt sieden/ Legs auff ein Roßt/ breuns ab/ vnd mach ein Brüh darzu/ es sey saur oder süß/ ist es auff beyde manier gut.

  1. Dismember the Indian chicken (turkey)/ wings and thighs/ stuff each separately/ and when it is stuffed/ set it to (the fire)/ and let simmer to the place (until done)/ Lay it on a grill/ brown it/ and make a broth for it/ be it sour or sweet/ it is good in both manners.

Indianischen Henn 4. Du kanst solche gefüllte Flügel auch eynmachen mit Pettersilgen Wurtzel/ guter Muscatenblüt vnd Rindtfleischbrüh/ auch mit grünen wolschmeckenden Kräutern. Du magsts gelb machen/ oder weiß lassen/ so ist es auff beyde manier gut.

  1. You can also make such filled wings in (a sauce) with parsley root/ good mace and beef broth/ also with fresh well tasting herbs.  You may make it yellow or leave white/ as it is good in both manners.

Indianischen Henn 5. Du kanst auch solche gefüllte Flügel vnd Diech in einem Pfeffer eynmachen.

  1. You can also make such stuffed wings and thighs in a pepper (sauce).

Indianischen Henn 6. Oder kansts grün eynmachen mit Pettersilgen/ die wol gesotten vn~ durchgestrichen ist/ von einem gebehten Schnitten Weck/ mit einer Rindtfleischbrüh/ sampt der Pettersilgen vnd Lebern. Würtz es ab mit Saffran vnd Pfeffer/ schaw daß du es nicht verwürtzest noch versaltzest/ so ist es gut vnd wolgeschmack.

  1. Or you can make it in a green (sauce) with parsley/ that is well cooked and strained/ from a toasted sliced weck bread/ with a beef broth/ together with parsley and livers. Season it with saffron and pepper/ see that you not overseason nor oversalt it/ like this it is good and well tasting.

Indianischen Henn 7. Nim~ ein halbe Brust/ die roh ist/ vnnd mach Knödel darauß/ es sey gelb oder weiß.

  1. Take a half breast/ that is raw/ and make dumplings from it/ be they yellow or white.

Indianischen Henn 8. Mach auß der andern halben Brust/ die gesotten
ist/ ein gestossens/ magsts weiß lassen/ oder grün machen/ mit grüner Pettersilgen/ die gesotten/

vnd mit guter Hennenbrüh durchgestrichen ist/ auch mit gebeht Schnitten/ so ist es gut vnd wolgeschmack.

  1. Make from the other half breast/ that is cooked/ a pounded mixture/ you may leave it white/ or make it green/ with fresh parsley/ that is cooked/ and strained with good chicken broth/ also with toasted slices (of bread)/ like this it is good and well tasting.

Indianischen Henn 9. Du magst auch wol ein gehack darauß machen/ ist es weiß/ so nim~ ein lautere Hennenbrüh/ Ist es aber gebraten/ so nim~ ein braune Brüh/ die du von einem Braten hast abgegossen/ mit einer Hennenbrüh/ die fein lindt gesaltzen ist. Wenn man es wil anff## ein Tisch anrichten/ so druckt man darein saur Pomerantzensaft/ so wirt es gut vnd lieblich.

You may also well make a mince from it/ if it is white/ then take a clear chicken broth/ if it is instead roasted/ then take a brown broth/ that you have poured off from a roast/ with a chicken broth/ that is very lightly salted. When one wants to dress it on a table/ then one presses sour Seville orange juice into it/ then it will be good and lovely.

Indianischen Henn 10. Du kanst auch Knödel in Pasteten eynmachen.

  1. You can also make meatballs in a pie.

Indianischen Henn 11. Du kanst auch auß der Brust kleine Pasteten machen.

Indianischen Henn 12. Oder auch Spanische Pasteten.

  1. Or also Spanish pies (empanadas).

Indianischen Henn 13. Auch Spanische krapffen.

  1. Also Spanish fritters (empanaditas).

Indianischen Henn 14. Du kanst auch Manscho Blancko auß der Brust machen/ wie vorhin vermeldt ist.

  1. You can also make blancmange from the breast/ as is described before.

Indianischen Henn 15. Auß dem Manscho Blancko kanstu machen ein Vngarische Turten.

  1. From the blancmange you can make a Hungarian Tart.

Indianischen Henn 16. Oder ein Spanische Turten.

  1. Or a Spanish tart.

Indianischen Henn 17. Auch ein Spanische Pasteten.

  1. Also a Spanish Pie.

Indianischen Henn 18. Krapffen zum backen. Nim~ Mehl/ warmes Wasser/ vnnd ein wenig Butter vnd Saltz/ mach das Mehl damit ab/ vnd mach ein Teig darauß/ nicht gar zu dick/ daß du jhn außtreibest mit einem Walger/ schlag den Manscho Blancko darein/ vnd mach krapffen darauß/ nim~ heisse Butter/ vnd backs fein kül auß/ daß fein weiß bleibet/ vnd nicht braun/ so wirdt der Teig resch vnd gut. Wen~ du es anrichtest/ so besträw es mit weissem Zucker.

  1. To fry fritters (ravioli). Take flour/ warm water/ and little butter and salt/ mix the flour with it/ and make a dough out of it/ not completely too thick/ that you drive it out with a roller/ wrap the blancmange in it/ and make fritters of it/ take hot butter and fry it nicely slow/ that remain nicely white/ and not brown/ then the dough will be crisp and good. When you it dress it/ then sprinkle it with white sugar.

Indianischen Henn 19. Mach auch ein Muß auß dem Manscho Blancko. Nim~ dz Manscho Blancko/ vnd theils mit Eiern ab/ vn~ mit süsser Milch/ nim~ ein Schüssel/ vn~ schmier die am Boden mit Butter/ die kalt ist/ thu darnach das Muß in die Schüssel/ scheub es in Ofen/ vnd backs/ so wirt es fein auflaufen/ vn~ wenn du es anrichtest/ so besträw es mit Zucker/ so wirt es gut.

  1. Also make a pottage from the blancmange. Take the blancmange/ and divide eggs up??/ and with sweet milk/ take a dish/ and spread the bottom with butter/ that is cold/ then put the pottage in the dish/ thrust it in (the) oven/ and bake it/ then it will puff up nicely/ and when you dress it/ then sprinkle it with sugar/ then it will be good.

Indianischen Henn 20. Du kanst auch von einem Indianischen Han ein lauter Brüh zurichten/ vnd mehr als viertzig Speise/ die nicht klein seind/ kochen. Du kanst dazu nemmen Magen/ Leber/ Därm vnd den Schweiß. Vnd du darffst nichts davon wegwerffen/ kanst alles zu nutz machen.

  1. You can also prepare a clear broth from a Indian chicken (turkey)/ and cook more than forty dishes/ that are not small. You can also take gizzard/ liver/ intestines and the blood. And you need to throw away nothing of it/ you can make use of everything.
